Paleo Grass-Fed Beef and Tomato Eggplant Sauce w/ Zucchini Noodles
Heat 1 tbs oil in large pan. Stir fry eggplant and onion until tender. Set aside. Add remaining oil to pan, and crumble in ground beef. Add spices and brown until almost cooked through. Add in tomato paste, and cook for another minute. Add 1/2 c - 3/4 c water and simmer for 5 minutes. Season to taste with salt and pepper. Serve over zucchini noodles.
